Meal Plan


Besides the photo above from our dating anniversary dinner this week, we do our best to make an effort to go low carb at our house during the week. Sometimes I cheat and go out for lunch but I find planning my meals really makes a difference. Here's our last weeks meals and a grocery list at the bottom in case you just want to roll with this plan the upcoming week and save time. I've linked the recipes if you click on the food.

Dinners

Monday - Buffalo Chicken Lettuce Roll Ups (recipe below)

Tuesday - Grilled Chicken Breast + Oven Roasted Brussel Sprouts

Wednesday - Jalapeno Popper Chicken (we omitted the bacon and bread crumbs) + Oven Roasted Green Beans

Friday - Go Out to Eat or Order Pizza

Saturday - Trader Joe's Frozen Chinese Chicken and Rice (AMAZING)

Lunches Al - Tortilla Soup and Diet Pepsi

Lunches Jake - Salad or soup and La Croix Mango

Shopping List to Get you from Monday - Thursday

  • Garlic

  • 2 Red Onion

  • White Onion

  • Green Bell Pepper

  • Red Bell Pepper

  • Yellow Bell Pepper (optional)

  • Anaheim Pepper

  • 2 Jalapeno Peppers

  • 1 Corn on the cob (optional)

  • Garlic

  • 3-4 Roma Tomatoes

  • 1-2 Avocados

  • Green Beans

  • Brussel Sprouts

  • 1 small Zuchini

  • Mixed Greens (if you want salads for lunch)

  • 6-8 Chicken Breast (if they are big you can cut some in half on some of the days like Buffalo wraps or Jalepeno roll ups)

  • 1 pound of ground Turkey Breast

  • Low Fat Sour Cream

  • 2 Bags or roughly 4 cups of sharp cheddar cheese

  • Fat Free Cream Cheese

  • 15 oz can of Black Beans

  • 10 oz can of Green Chilis

  • 32 oz of Low Sodium Chicken Stock

  • 1 Can of enchilada sauce

  • Salsa

  • Small Can of Tomato Paste (need 2-3 Tablespoons)

  • Olive Oil, Cumin, Chili Powder, salt, pepper (unless you have it already)

  • Package of Flour Tortillas

  • Buffalo Sauce

Buffalo Chicken Lettuce Roll Ups Recipe

Cook two chicken breasts and then shred it and mix it with low fat cheddar cheese, buffalo sauce, diced onion, and a little ranch. Bake in the oven on 350 degrees until everything is warm (about twenty minutes). Prepare lettuce leaves by adding some tomato to the bottom and scoop the chicken mixture inside. Top with cheddar cheese (or cheetos like we did! ha!).
