This is one of my favorite low carb dishes. It's so easy, and it tastes amazing.
Ingredients:
2 chicken breasts, one white onion, one green pepper, 2 Tablespoons worcestershire sauce, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 2 teaspoons of olive (or vegetable) oil, 4 slices pepperjack or provolone (or equivalent shredded) cheese
Instructions:
1. Cut up your chicken at least a few hours before you cook it, or the night before, and marinate it in the fridge by adding the worcestershire sauce, onion powder, garlic powder, and black pepper to the chicken.
2. Pour 2 Teaspoons of olive oil in the pan, and heat to medium heat. Add the chicken pieces and cook for about 3-5 minutes on each side.
3. Remove the chicken from the oil, and add the onions and the peppers and cook until they are soft.
4. Add the chicken back into the mixture and place the cheese over your chicken and vegetables. I used four slices of pepperjack for 2 servings.
5. Serve on a plate or over salad if low carb, or put on a hoagie for everyone else!
