chocolate chip cookie ice cream sandwiches

This post is not groundbreaking, but it's worth sharing because these are that good. Jake has requested them again for his dessert this week too.

As with everything in this life, it's the attention to details that take the normal stuff into extraordinary stuff.

With these sandwiches, you need to use your favorite homemade chocolate chip cookie recipe and use freshly made homemade ice cream. We make our ice cream with this machine (you can get it on sale with your Bed Bath and Beyond coupons or signing up for email lists). One secret I've learned with chocolate chip cookie dough is that if you let it chill in the fridge for 24-48 hours before baking then it caramelizes the flavors and takes your cookies to the next level.

I used a cookie dough scoop to size the dough into about 1.5" balls and that yielded perfectly round 3" cookies. Bake the cookies so that they are golden but slightly underbaked in the centers and that will add a cookie dough flavor to your sandwiches. After you let the cookies cool, you need to freeze them for a couple hours so that they won't break when you form the sandwiches.

We used regular old vanilla ice cream but think of all of the possibilities (chocolate, peanut butter, mint chip, rocky road, cake batter...). Finish off these sandwiches by rolling the outside of the finished cookies in mini chocolate chips, candy bars, or Andes mints!
