caramel shortbread bars


We enjoyed making these over Christmas break (video here) so much this year we have already whipped them up again. These caramel shortbread bars were adapted from this recipe. The homemade caramel topping is chewy and delicious and the shortbread base is light and crisp. Add some freshly ground sea salt on top and it's the perfect combo!

A few tips:

Keep the butter as cold as you can before mixing and baking the shortbread.

Continuously whisk the caramel topping in order for it to set correctly. It doubles as an arm workout.

Let it cool to room temperature before cutting it. We tried cutting it right out of the freezer and it was so difficult.
