It's been awhile since I posted a week of meal planning. I had not been eating the healthiest and so I didn't have any good low carb meals for a little while. I also only like to post if the recipes turn out great!
So, here's my fourth low carb meal plan along with a shopping list. Check the others out here.
DINNERS
Sunday: Stuffed BBQ Chicken Twiced Baked Sweet Potato (Loved this!)
Monday: Zucchini Roll Up Chicken Enchiladas + added guac + topped with tomatoes, onion, and sour cream
Tuesday: Grilled Chicken Breast and BangBang Brussels (these are so good!)
Wednesday: Out to Eat, TapHouse
Thursday: Grilled Chicken Breast and Oven Roasted Green Beans
Saturday: Pizza and/or Movie Theater Popcorn - do you ever just go to the theater for popcorn then take it home? Just me??
Shopping List for 2 Adults:
6-7 Chicken Breasts
2 NY Strips (or whatever steak you want to slice up)
2 Zucchinis
2 Sweet Potatoes
1 Jalapenos
garlic head
2 Red Onion (For Sunday, Monday (save a little for guac too), Friday)
Cilantro
Brussel Sprouts
Green Beans
1 Green Bell Pepper
1 Red Bell Pepper
Can of Red Enchilada Sauce
BBQ Sauce
Sweet chili Sauce
Italian Seasoning
Siracha
Smoked Gouda Cheese - the smokiness makes the flavor amazing on Sunday's dish!
Shredded Monterey Jack Cheese (used for Monday and Friday)
Sour Cream
